For the air fryer Filet I bought a bacon wrapped filet tenderloin and heavily seasoned it in salt, pepper and mushroom umami seasoning. Let it come to room temp. Spray the bottom of your basket with oil and put the steak in at 390° for 6 minutes. Flip them do 6 more minutes. Remove and fry in a screaming hot skillet with butter on both sides and put on a cooling wrack. Check temp and let rest for 5 minutes. I had it perfect temperature because I love medium rare but my daughter needed me and it sat out for 8 minutes and cooked longer 🤦♀️ still delicious though!
For the blue cheese cream sauce I pour 1/3 a cup of heat cream into the drippings of the steak and whisk bringing to a boil and thickening it. Add as much or as little blue cheese as you want and let that melt in. Add a pinch of salt. Let it get thick enough but still pourable. Slice the steak and pour over. Season. And add chopped chives.
For the salad it’s just drizzled in good extra virgin olive oil, lemon juice, black truffle oil, salt and pepper. Simple but perfect!
