For the sour cream and onion chicken I just ordered one of the onion salt seasoning from Trader Joe’s and heard it was so good. I wanted to really taste it so I seasoned 2 pounded chicken breasts with the Onion Salt, salt and pepper. In a skillet at medium heat I got some oil and butter hot then browned both sides of the chicken and put them on some foil and into the oven for 5-10 minutes depending on how big. In the drippings I added half a large onion cut into half moons. Sauté till soft then add some garlic. Sauté a minute. Add 1/4 a cup of chicken bone broth and let that reduce a bit. Add 1/2 a cup of sour cream, 1 tablespoon of chopped parsley, salt and pepper. Add more of the onion salt and mix the sour cream and onions together. Top the chicken with the sauce. If you let it sit too long it will separate because of the sour cream. It’s still delicious!
For the green beans I found the ultra fine green beans in the freezer section at Target. Put them in boiling water till they are cooked but not mushy. In a skillet I put 2 slices of bacon cut into lardons and browned them till crispy. Remove to a plate and add the green beans to the bacon fat with a little bit of butter, lots of salt and pepper. Toss till blistered and top with chopped pecans, the crispy bacon and a squirt of lemon juice.
